Tater Tot Breakfast Casserole

  • 1 (28oz) pkg frozen Tater Tots
  • 1 lb. cooked breakfast sausage or 8 oz. cooked bacon or Canadian bacon, diced
  • 2 yellow onions, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 ½ cups shredded cheddar or pepperjack cheese, or a mixture of both
  • 1 cup milk
  • 12 eggs
  • 1 tsp. salt
  • 1 tsp. freshly ground pepper


Layer half of the Tater Tots in the bottom of a greased slow cooker crock. Layer with sausage or bacon, onions, peppers and half of the shredded cheese. Top with remaining Tots. Whisk together milk, eggs, salt and pepper and pour over the top of the casserole. Top with remaining cheese. Cover and cook on low for 6-8 hours. Serves 8-10.
