Foil Pack Salmon Dinner
Easy to make, easy clean-up, and oh-so-good, this foil pack dinner will become one of your campsite favorites.
Ingredients:
- Heavy duty aluminum foil
- 2 skin-on salmon filets (4-6 oz each)
- ½ pound asparagus spears, any hard stems removed
- 2 cups cooked rice (steam in bag rice works well)
- Salt and pepper, to taste
- 1 tsp dried dill or 2 tsp fresh dill
- 1 tsp garlic powder
- 1 lemon
- 4 tbsp butter
- Thyme sprigs, optional
Directions:
1. Preheat grill to medium. Tear four 14-inch pieces of heavy-duty aluminum foil and stack to make 2 piles.
2. Place cooked rice, asparagus and salmon in the center of each packet. Sprinkle with salt and pepper, dill and garlic powder.
3. Zest the lemon and add to the packets. Cut lemon in half and squeeze one half of the lemon over the packets. Slice the remining half and place the slices on each packet.
4. Dot with butter or melt butter and drizzle evenly over packets.
5. Wrap each packet, sealing edges well, but leave a small opening in each pack for steam.
6. Place on grill, cover and cook for 10-12 minutes, checking occasionally to see if fish is done.
