The egg filling magically sticks to the tortilla for a simple, delicious camp breakfast!
One Pan Breakfast Quesadilla
Ingredients:
– 8-10 strips bacon
– 4 flour tortillas
– 8 eggs
– 1 cup cottage cheese
– Salt and pepper, to taste
– 1-2 cups shredded cheese
– 1 can diced green chilies
– Sliced green onion, chopped avocado and salsa, for serving
Directions:
1. Place a cast iron skillet on the grill and preheat to medium high.
2. Add bacon to skillet and cook until crispy. Remove and place on paper towels to
drain. Pour all but 1 tablespoon of bacon grease from pan (save the rest for next batch!)
3. Whisk together two eggs, ¼ cup cottage cheese and a sprinkle of salt and pepper.
4. Add to pan and swirl to spread over bottom of pan. Cook until eggs begin to firm up and bubble around the edges, then top with a tortilla. Cook until eggs are done and you can easily flip the tortilla.
5. Top eggs with ¼-1/2 cup cheese and 1 tablespoon green chiles, fold in half and cook until tortilla is golden brown on both sides, flipping as needed.
6. Remove from heat, carefully open the quesadilla and add avocado and green onion. Serve with salsa for dipping.
7. Repeat for the remaining servings. Makes 4 quesadillas.
