Blueberry Cheesecake Tostadas

One of our favorite grilled desserts – every bite is crispy, crunchy, creamy and juicy! Make these dessert tostadas your own by switching up the ingredients.

Blueberry Cheesecake Tostadas

Ingredients

  • 1/2 cup butter
  • ½ cup sugar
  • 3 Tbsp. cinnamon
  • 2 Tbsp. lemon juice
  • 1 (8 oz) package cream cheese, softened
  • 2/3 cup sour cream
  • 1/3 cup powdered sugar
  • 1 tsp. vanilla
  • 2 cups fresh blueberries
  • Zest of 1 lemon
  • Honey 8 -10
  • Fajita-size tortillas

 

Directions

  1. Clean and oil grill. Preheat to medium high.
  2. Melt butter in a heat-safe pan on the grill.
  3. Combine cinnamon and sugar in a small bowl.
  4. In a separate bowl, lemon juice, cream cheese, sour cream, powdered sugar and vanilla.
  5. Brush one side of a tortilla with melted butter and sprinkle with cinnamon sugar. Place sugar-side-down on the grill and cook until tortilla bubbles and bottom is crisped and brown. Brush top side or tortilla with butter and flip.
  6. Grill until just crisp.
  7. Place tortilla, sugar side up, on plate. Spread with cream cheese mixture, top with blueberries and a pinch of lemon zest, then drizzle with a little honey. Repeat.

Makes 8-10 servings.
