Ever used your waffle iron to make hashbrowns? It couldn’t be any easier! Perfect for breakfast on the go, these crispy breakfast waffles also freeze well. Simply reheat in the toaster or toaster oven.
Waffle Iron Hashbrowns
Ingredients
- 1 (20oz) package frozen hashbrowns, thawed
- 3 Tbsp. melted butter
- 1 cup shredded cheddar cheese
- 1/2 cup chopped ham
- ½ cup chopped red bell peppers
- 1/3 cup chopped green bell peppers
- 3 eggs, beaten
- 1 tsp garlic salt
- ½ tsp freshly ground pepper
- Sour cream, for serving, optional
Directions
- Preheat waffle iron to medium-high.
- Place thawed hashbrowns in a clean kitchen towel or cheesecloth and squeeze 2-3 times to remove some excess liquid. Alternately, place in a strainer and press out excess liquid.
- Combine hashbrowns, melted butter, cheese, ham and peppers in a large bowl. Add beaten eggs, garlic salt and pepper and gently stir until well combined.
- Spray waffle iron with cooking spray and add enough of the potato mixture to fill your waffle iron within an inch of the sides (a heaping ½ cup for most waffle irons).
- Close and cook for 3-4 minutes until brown and crispy. Don’t overcook or the waffles will become dry.
- Makes about 6 waffles.
