It’s a glamping kind of summer, and this brie is the perfect snack!
Hot and Sweet Grilled Summer Brie
Ingredients:
- Olive oil
- 1 baguette, sliced into 1/2-inch rounds
- 1 ripe peach, pitted and sliced
- 1 1/2 cups seedless grapes
- 1 (8oz) wheel brie
- 1/3 cup pepper jelly
- Fresh thyme sprigs, for garnish
- Assorted crackers, for serving, optional
Directions:
1. Preheat grill to medium. Slice baguette and peaches.
2. Score the top of the brie in a crosshatch pattern.
3. Place a 7-8-inch cast iron skillet on the grill and lightly drizzle with olive oil.
4. Add the brie and surround with grapes. Top the brie with pepper jelly.
5. Brush the baguette slices and peaches lightly with olive oil and add to grill.
6. Cover and cook for 2-3 minutes.
7. Check bread and if it’s golden brown flip it, along with the peach slices.
8. Cover and cook for another 2-3 minutes until bread and peaches are done. Remove from grill.
9. Cheese should be melty and bubbly by now, but it may need a few more minutes in the covered grill.
10. To serve, top brie with grilled peaches and thyme sprigs and place the skillet on a cutting board. Surround with baguette slices and crackers, if using.
