Caramelized pineapple, cold ice cream and luscious dulce de leche create a dazzling Caribbean-style dessert. Try this easy camping dessert next time you’re out exploring!
Grilled Pineapple and Dulce de Leche Sundaes
Ingredients
- 1 whole pineapple
- ½ cup brown sugar
- ½ tsp cinnamon
- Pinch of cayenne
- ½ cup butter, melted 1 can dulce de leche
- 1-quart vanilla ice cream, for serving
- 1 cup toasted coconut flakes, for garnish
Directions
- Clean and oil grill grates. Preheat grill to medium-high.
- Open can of dulce de leche and place in a heatproof pan filled with water, then add to grill.
- Peel, quarter and core pineapple, then cut each quarter into 3 spears.
- Combine brown sugar, cinnamon and cayenne.
- Brush each spear with melted butter and use finger to press brown sugar mixture onto spears.
- Place spear on hot grill and cook and cook for 3-4 minutes on each side until caramelized.
- Place in bowls and top with vanilla ice cream, drizzle with warm dulce de leche and sprinkle with toasted coconut.
- Serves 6-8.
