An easy donut recipe that’s as sweet as can be any time of year. Looking for a treat to spook your friends? A few simple details will add a little scary to this treat.
Baked Pumpkin Spice Monster Donuts
Ingredients
- 2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 teaspoon salt
- 2 ½ tsp pumpkin pie spice
- 1/2 cup vegetable oil or melted butter
- 3/4 cup dark brown sugar
- 2 eggs
- 1 ½ cups canned pumpkin
- 1 tsp vanilla
For finishing:
- ½ cup butter, melted
- ½ cup sugar
- 2 Tbsp. cinnamon
- 12 plastic vampire fangs
- Candy eyes (to attach to donuts, combine ¼ cup powdered sugar + 1-2 tsp milk of choice)
Directions
- Preheat oven to 350 degrees and spray a 6- or 12-count donut pan with cooking spray.
- Whisk together flour, baking soda, baking powder, salt and pumpkin pie spice.
- In a separate bowl, whisk together oil or butter, sugar, eggs, pumpkin and vanilla.
- Combine wet and dry ingredients, stirring until combined.
- Pipe or spoon batter into prepared pan. If you have a 6-count pan, you’ll need to bake two batches.
- Bake for 10-12 minutes until tops spring back. Repeat with remaining batter, if necessary.
- To finish: Melt butter and place in a shallow bowl
- Combine granulated sugar and cinnamon in another bowl.
- Dip each donut in butter followed by cinnamon sugar and place on a wire rack.
- Cut each set of fangs in half so they don’t tear apart the donuts. Place each half in the hole of each donut.
- Combine powdered sugar and milk to make a thick frosting. Dip each eye in the frosting and attach to the donuts.
- Makes 12 donuts.
