Prep this salad before your next camping trip and a crunchy, delicious (and healthy!) camping lunch or dinner comes together in a snap.
Teriyaki Chicken Crunch Salad
Ingredients
- 1 ½ lbs. chicken breasts
- 1 cup teriyaki sauce
- 1 head romaine lettuce, chopped
- ½ head red cabbage, thinly sliced or shredded
- 1 small English cucumber, chopped
- 1 red bell pepper, chopped
- 4-5 green onions, thinly sliced
- 1 cup shredded carrots
- 1 cup snap peas, roughly chopped
- 1 (11-ounce) can mandarin oranges, drained
- 1 cup crispy wonton strips
- 1 cup roasted, salted peanuts
Dressing
- 2 Tbsp. soy sauce
- 1 Tbsp. rice wine vinegar
- 2 Tbsp. fresh lime juice
- 1 Tbsp. hot honey
- ½ tsp. garlic powder
- 5 Tbsp. creamy peanut butter
- 2-4 Tbsp. water
Directions
- Combine chicken breasts and teriyaki sauce in a zip top bag and place in the refrigerator for at least 2 hours or overnight
- Chop all vegetables. Store in containers if taking camping.
- Place all dressing ingredients except water in a jar, cover and shake until well combined. Add water, a tablespoon at a time, until dressing can be drizzled.
- Clean and oil grill grates. Preheat grill to medium high,
- Place chicken breasts on grill, cover and cook for 7 minutes. Flip and cook for another 5-7 minutes until chicken is done. Let rest for 5 minutes, then cut into cubes.
- To serve, place all vegetables in a large bowl. Top with chicken, wonton strips and peanuts. Drizzle with dressing and toss.
