If you want to share up your classic camping dessert routine, try this easy puffy pastry fruit tart recipe. Switch up the fruit and these tasty peach upside-down pastries will never let you down.
Upside-Down Peach Pastry
Ingredients
- 1 sheet puff pastry (1/2 a box)
- 3 ripe peaches, halved and sliced
- Honey or hot honey
- Egg wash: 1 egg + 1 Tbsp water
- Ice cream, for serving
- Fresh thyme sprigs, for serving, optional
Directions
- Preheat grill to high heat, 500°F.
- Line a large skillet or flat griddle with parchment paper. (Make sure the paper is not hanging off the edges to avoid flames)
- For each tart – drizzle a tablespoon of honey on the parchment and top with 1/6th of the peach slices. Drizzle peaches with another teaspoon of honey.
- Unfold the puff pastry and cut into 6 rectangles.
- Top each peach pile with a rectangle of puff pastry and use a fork the press down the edges.
- Brush with egg wash. (Note: Fill your skillet or griddle only to the point that all the tarts can be cooked over indirect heat.)
- Place the pan on the grill and quickly close the lid. Turn of the burner(s) under the tarts and leave the other burner(s) on high to create indirect heat.
- Bake for 15-17 minutes until pastry is cooked through.
- Use a spatula to flip the tarts and serve each with vanilla ice cream and a thyme sprig.
- Makes 6 tarts.
