Camp cooking doesn’t have to mean hot dogs and hamburgers. Even simple recipes can add a gourmet trip to your next grilled meal. Elevate your camp cooking the easy way with this simple shrimp scampi recipe.
Shrimp Scampi on the Grill
Ingredients
- ½ cup butter
- 3 cloves garlic, minced
- 1 pound uncooked shrimp, peeled and deveined
- 4 Tbsp dry white wine
- Zest of 1 lemon
- 1 Tbsp lemon juice
- Pinch or red pepper flakes
- ½ tsp salt
- ¼ cup chopped parsley, optional
- 1 baguette
- 4 servings cooked pasta, optional
- Heavy-duty aluminum foil
Directions
- Preheat grill to medium-high.
- Combine butter and garlic in a heatproof pan and place on grill to melt butter.
- Tear four 12-inch sheets of aluminum foil.
- Stack two sheets at different angles. Repeat with remaining foil.
- Divide shrimp between tin foil.
- Sprinkle each packet with lemon zest, lemon juice, red pepper flakes and salt.
- Pour half of the melted butter over the packets, saving the other half for the bread.
- Gather tin foil at the top of the packets and place on the preheated grill. Cook for about 8 minutes until shrimp is pink and cooked through.
- While shrimp is cooking slice the baguette in half and cut each half diagonally. Brush with remaining garlic butter.
- Place bread on grill and toast.
