Did you know that you don’t need to make pancakes round? Try this fun variation of pancakes based on a classic Austrian recipe, Kaiserschmarrn.
Scrambled Pancakes
Ingredients
- Butter
- Pancake batter, homemade or just-add-water mix
- Vanilla and cinnamon, to taste
- Fresh fruit (blueberries, raspberries, strawberries, bananas, etc.)
- Toasted nuts
- Maple syrup
- Powdered sugar
Directions
- Clean and oil flattop griddle, place on grill and preheat to medium-high.
- Make pancake batter and flavor with vanilla and cinnamon.
- Melt 2-3 Tbsp butter on the griddle and add batter.
- Cook for 3-4 minutes until bottom is just starting to set.
- Scramble and flip batter, continuing to stir and flip until all batter has cooked.
- Spoon into bowls and top with fruit, nuts, syrup and maple syrup.
