Queso on the Grill

This easy and delicious dip is perfect for gameday and beyond – and feeds a crowd, too!

Queso on the Grill

Ingredients:

  • 1 large disposable aluminum roasting pan
  • 1 (32 oz) block of queso blanco melting cheese, cubed (such as Velveeta)
  • 1 pound pepper jack cheese, cubed
  • 1 (8 oz) block cream cheese
  • 2 (10 oz) cans Rotel tomatoes
  • 1 (15 oz) can black beans, drained
  • 1 (15 oz) can corn, drained
  • 1 (7 oz) can green chilies, drained
  • 1 (12 oz) can evaporated milk (optional)
  • Tortilla chips, for serving

Directions:

1. Preheat grill to medium high heat.
2. Place roasting pan on grill and place all ingredients in pan except for evaporated milk.
3. Turn on flame directly under pan, close grill and cook over indirect heat for 15 minutes.
4. Open grill, stir well and cook for another 10-15 minutes, until cheese is fully melted and all ingredients are well combined. Thin with evaporated milk if desired.
5. Turn grill to lowest setting and get dipping!
