Cook the bacon ahead of time at home and this camp breakfast is easy, breezy, and fun! Both types are great, but we think the peanut butter banana dippers are out of this world!
Pancake Bacon Dippers
Ingredients:
– 12 slices thick-cut bacon, fully cooked
– 2 cups complete pancake mix
– 1 ½ cups water
– 1-2 tbsp salted butter
– 2-3 bananas
– ½ cup melted peanut butter
– For serving: powdered sugar and maple syrup
Directions:
1. Place oiled griddle on grill and preheat to medium heat.
2. Combine pancake mix with water.
3. Melt 1-2 tablespoons on griddle.
4. Dip each piece of bacon in batter and place on grill.
5. For peanut butter banana dippers, place a line of thinly sliced bananas on top of bacon and top with a drizzle of melted peanut butter.
6. Once bottoms of dippers are golden brown, flip and cook the other side until golden brown.
7. Remove from griddle, dust with powdered sugar and serve with warm maple syrup.
