Nutty Sweet Potato Pancakes | Camping Recipe

Nutty Sweet Potato Pancakes


  • ¾ cup pureed sweet potatoes
  • 2 Tbsp. brown sugar
  • 1 tsp. cinnamon
  • ½ tsp. ground ginger
  • 2 Tbsp hazelnut liqueur, such as Frangelico
  • 1 3/4 cups water
  • 3 cups buttermilk pancake mix, such as Krusteaz Hazelnut

Maple Syrup

  • 1 cup maple syrup
  • 2-3 Tbsp. hazelnut liqueur
  • 1 tsp vanilla
  • 3/4 cup roasted salted pecans, for serving
  • Butter, for serving


  1. Preheat grill and griddle to medium.
  2. Whisk together sweet potatoes, brown sugar, cinnamon, ginger, hazelnut liqueur and water until well combined.
  3. Whisk in pancake mix until combined, a few lumps are fine.
  4. Drop by 1/3 cupfuls onto hot griddle and cook until bottoms are done, then flip and cook the other sides.
  5. Repeat until batter is done.
  6. While pancakes are cooking, combine maple syrup, hazelnut liqueur and vanilla in a small heat-safe pot and add to the grill.
  7. To serve, stack pancakes, top with butter, syrup and toasted nuts.
