Nutty Sweet Potato Pancakes
Ingredients
- ¾ cup pureed sweet potatoes
- 2 Tbsp. brown sugar
- 1 tsp. cinnamon
- ½ tsp. ground ginger
- 2 Tbsp hazelnut liqueur, such as Frangelico
- 1 3/4 cups water
- 3 cups buttermilk pancake mix, such as Krusteaz Hazelnut
Maple Syrup
- 1 cup maple syrup
- 2-3 Tbsp. hazelnut liqueur
- 1 tsp vanilla
- 3/4 cup roasted salted pecans, for serving
- Butter, for serving
Directions
- Preheat grill and griddle to medium.
- Whisk together sweet potatoes, brown sugar, cinnamon, ginger, hazelnut liqueur and water until well combined.
- Whisk in pancake mix until combined, a few lumps are fine.
- Drop by 1/3 cupfuls onto hot griddle and cook until bottoms are done, then flip and cook the other sides.
- Repeat until batter is done.
- While pancakes are cooking, combine maple syrup, hazelnut liqueur and vanilla in a small heat-safe pot and add to the grill.
- To serve, stack pancakes, top with butter, syrup and toasted nuts.
