Craving s’mores, but can’t have a campfire? Try this deliciously cool no-bake alternative instead!
No-Bake Peanut Butter S’mores Pie
Ingredients:
- 1 ½ cups graham cracker crumbs (about 12)
- 1 tbsp brown sugar
- 6 tbsp butter, melted
- 1 cup semisweet chocolate chips
- 12 oz room temperature cream cheese, divided
- 1 cup creamy peanut butter
- ¾ cup powdered sugar
- 1 tsp vanilla
- 1 ½ cups heavy cream
- 4 oz (1 ¼ cups) marshmallow fluff
- Decoration (optional): toasted mini marshmallows, peanut butter cups, chocolate candy, melted chocolate, melted peanut butter
Directions:
1. Combine graham cracker crumbs, sugar and butter in a 9-inch pie dish. Press into the bottom and sides of the dish. Refrigerate.
2. Melt chocolate chips in a heatproof bowl set over simmering water. Alternately, microwave in 20 second increments, stirring after each heating until melted.
3. Spread a very thin layer of melted chocolate over graham cracker crust. Return to fridge.
4. Beat 8 ounces of the cream cheese, peanut butter, powdered sugar and vanilla until light and fluffy, about 3 minutes.
5. In a separate bowl, beat heavy cream until it reaches stiff peaks. Measure out 1 cup of whipped cream and set aside for topping.
6. Stir half of the remaining whipped cream into the peanut butter mixture until smooth. Gently fold in remaining whipped cream (except the reserved 1 cup). Spread into graham cracker crust and refrigerate.
7. Beat remaining 4 oz cream cheese and marshmallow fluff until combined. Fold in reserved 1 cup whipped cream.
8. Spread over peanut butter layer.
9. Refrigerate at least 6 hours or overnight.
10. To serve: Sprinkle top with mini marshmallows and place under preheated broiler for 1-3 minutes, watching closely until toasted. Alternately, toast marshmallows with a kitchen torch.
11. Arrange chopped peanut butter cups and chocolate bar pieces around the edges of crust. Drizzle with melted chocolate chips and melted peanut butter.
12. Cover and refrigerate any leftovers (as if there’ll be any left!)
