Start the morning off right with these delicious muffins filled with whole grains, fruit, veggies and deliciousness. They freeze well, so they are perfect for baking ahead for a healthy start to your day of camping!
Morning Glory Muffins
Ingredients
- 2 cups peeled and grated carrots
- 1 Granny Smith apple, grated
- 3 eggs
- 2/3 cup dark brown sugar
- 1/3 cup honey or maple syrup
- 2 tsp vanilla extract
- 1/3 cup coconut oil, melted (or canola oil)
- 1/3 cup applesauce
- 1/3 cup crushed pineapple, undrained
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 2 tsp baking soda
- 2 tsp cinnamon
- ½ tsp salt
- 1/3 cup ground golden flax, optional
- ½ cup dried cranberries
- ½ cup chopped walnuts
- 1/2 cup turbinado sugar
Directions
- Preheat oven to 375°F. Line a 12-cup muffin tin and a 6-cup muffin tin with paper liners and spray liners with cooking spray.
- Peel and grate carrots. Grate apple. Set aside
- In a large bowl whisk together eggs, sugar, honey, coconut oil, applesauce, vanilla and pineapple.
- In a separate bowl, whisk together flours, soda, cinnamon, salt and flax.
- Add dry ingredients to wet ingredients and stir well to combine.
- Stir in cranberries and walnuts.
- Scoop into prepared muffin tins, filling each cup to the top – recipe makes 16-18 muffins.
- Sprinkle tops with turbinado sugar and bake for 25-28 minutes until tops spring back and a tester inserted in the center of a muffin comes out clean.
- Store at room temperature or freeze.
