Ice Cream French Toast
Ingredients:
- ½ cup butter, divided
- 5 bananas, peeled and sliced
- 2-3 tbsp brown sugar or coconut sugar
- 1 quart vanilla bean ice cream, melted
- 1 loaf sturdy brioche bread
- Fresh berries and maple syrup for topping (optional)
Directions:
1. Preheat grill to medium and place an oiled griddle or cast iron pan on the grate.
2. Place sliced bananas on two layers of heavy duty aluminum foil, top with 2-3 tablespoons of butter and sugar. Seal and place on the grill grate (not the griddle).
3. Melt a tablespoon of butter on the griddle.
4. Dip slices of bread in the melted ice cream and place on the hot griddle. Cook until bottoms are golden brown, then flip and cook the other side.
5. Continue cooking French toast until you’ve made enough for everyone.
6. Serve with caramelized bananas and their syrup and remaining butter. Add fresh berries and maple syrup, if desired.
