How to Make Sheet Pan Dinners

Make two easy sheet pan dinners.

Making a whole meal is a breeze with these easy sheet pan recipes. Make them at home, in your RV or pre-make for an easy camping dinner that just needs heating.

Sheet Pan Salmon & Asparagus

Ingredients

  • 2 salmon filets
  • Salt and pepper
  • 1 lb asparagus
  • 1 cup good-quality Italian dressing
  • 2 Tbsp. grated Parmesan
  • Juice of 1 lemon
  • Lemon slices, for garnish

 

Directions

  1. Preheat oven to 400 degrees. Line a sheet pan with parchment paper or foil and spray with cooking spray.
  2. Place salmon filets on sheet pan and sprinkle with salt and pepper. Add asparagus to pan. Drizzle with Italian dressing and toss to coat. Sprinkle with Parmesan and lemon juice. Garnish with lemon slice. Bake for 20 minutes or until salmon is done. Serves 2.

 

Sheet Pan Teriyaki Chicken

Ingredients

  • 2 chicken breasts (about 1 pound), cut into strips
  • Salt and pepper
  • 2 cups broccoli florets
  • 2 cups baby carrots
  • 1 red onion, sliced
  • 1 cup low-sodium teriyaki sauce, plus more for serving
  • 1/2 cup pineapple tidbits

 

Directions

  1. Preheat oven to 400 degrees. Line a sheet pan with parchment paper or foil and spray with cooking spray.
  2. Place chicken pieces on sheet pan and sprinkle with salt and pepper. Add vegetables. Drizzle with teriyaki and toss to combine. Top with pineapple. Bake for 20 minutes or until chicken is thoroughly cooked. Brush with additional teriyaki. Serve with rice, if desired.
