No room in the oven on Thanksgiving? Throw these delicious caramelized sweet potatoes on the grill!
Grilled Sweet Potatoes
Ingredients:
- 1 ½ pounds sweet potatoes, peeled
- ¼ cup butter
- ½ cup dark brown sugar
- 2 tbsp maple syrup
- ½ tsp cinnamon
- ¼ tsp ground ginger
- ½ tsp vanilla
- 2-3 tsp chopped fresh rosemary leaves
- Flaky sea salt
Directions:
1. Preheat grill to medium high.
2. Tear two 18” sheets of heavy duty aluminum foil and place one on top of the other at an angle. Spray top sheet with cooking spray.
3. Slice sweet potatoes into ½ inch rounds and place on sprayed foil.
4. Melt butter on grill in a heat-safe pot. Add brown sugar, maple syrup, cinnamon, ginger, vanilla and salt.
5. Pour mixture over potatoes and toss to combine. Seal the packet with the double foil, making sure both layers of foil are well-sealed.
6. Bake for 20 minutes, flipping halfway through. Check potatoes and if they are not fork-tender, cook for another 5-10 minutes.
7. Pour into serving bowl, sprinkle with rosemary and sea salt and serve. Yum!
