This low-carb camp recipe creates the most delicious crispy, cheesy, pickley sandwich you’ve ever had!
Grilled Pickle Sandwich
Ingredients (per sandwich)
– 6 sandwich sliced dill pickles
– 1 cup cheddar, jack or mozzarella cheese, or any combination sandwich fixings: we used turkey, sliced tomatoes, sliced cucumbers, lettuce, mustard, and mayo!
Directions
1. Preheat grill with a lightly oiled griddle or flat top to medium high.
2. Cut a piece of parchment paper to fit griddle. (Don’t let any paper hang over the griddle.)
3. Spread two mounds of cheddar cheese on parchment, about 1/3 cup for each.
4. Top each mound of cheese with three pickles and top with remaining cheese.
5. Cover grill and cook for 4-5 minutes until cheese is fully melted and browning on the edges.
6. Use a spatula to remove cheesy pickle “bread” from parchment and place on a plate or paper towel to cool.
7. Place one piece of the cheesy pickle bread on a plate and spread with mustard or mayo and top with lunchmeat and veggies. Top with the other piece of cheesy pickle bread and slice in half.
