This camping recipe is simple, elegant and the perfect way to showcase ripe summer fruit. Wow your camping friends with this unique grilling recipe.
Grilled Peach, Cherry & Burrata Flatbread
Ingredients
- 2 store-bought naan or flatbread
- Olive oil
- 2 peaches
- 1 cup cherries, pitted
- 1 cup arugula
- 1 (6oz) pkg. prosciutto
- 2 balls of burrata
- ¼ cup fresh basil leaves, thinly sliced
- Balsamic reduction, for drizzling
- Metal or wooden skewers
Directions
- Soak wooden skewers, if using, for 15 minutes in water.
- Clean and oil grill grates and preheat grill to medium-high.
- Slice peaches and pit cherries, then thread onto skewers.
- Brush with olive oil and place on grill.
- Brush flatbread or naan with olive oil and place on grill.
- Grill flatbread until grill marks appear and bread crisps slightly, about 2-3 minutes per side, then remove from grill
- Grill fruit until grill marks appear on the peaches and cherries are heated through, about 2-3 minutes. Flip skewers and grill the other side for 2-3 minutes. Remove from grill.
- Divide the arugula between the flatbreads and distribute prosciutto around each bread. Add grilled fruit, then tear pieces of burrata.
- Top with basil and drizzle with balsamic reduction to taste.
- Serves 2-4.
