A camping favorite, these easy nachos feed a crowd!
Grilled Camp Nachos
Ingredients
- 1 lb. hamburger cooked with taco seasoning
- 4-5 jalapenos
- 5-6 sweet peppers
- 1 bunch green onions
- Olive or vegetable oil
- 1 bag tortilla chips
- 2-4 cups shredded cheddar and/or pepper jack cheese
- 1 can black beans, drained and rinsed
- 2/3 cup sliced black olives, optional
- For garnish: diced tomatoes, guacamole, sour cream, cilantro, salsa
Directions
1. Preheat grill and grill basked to medium heat.
2. Line a baking sheet with aluminum foil
3. Place jalapenos, peppers and onions in grill basket, drizzle with oil and toss to
coat.
4. Cook until charred and tender. Then remove and slice into bite sized pieces.
5. Spread half of chips on prepared baking sheet. Top with half of the cheese, taco
meat and black olives.
6. Top with the remaining chips, cheese, taco meat and olives.
7. Place on grill, cover and cook until cheese is almost melted.
8. Add sliced peppers and onions, cover and cook until melty and delicious.
9. Serve with diced tomatoes, guac, sour cream, cilantro and salsa.
Serves 6-8 people.
