Grilled Bacon Wrapped Dates
Ingredients
- Toothpicks or bamboo skewers 1
- pound thin-cut bacon
- 1 (5.2 oz) container garlic & herb soft cheese (such as Boursin)
- 30 dates
- 30 Marcona almonds
- Balsamic glaze, for drizzling
Directions
- – Soak toothpicks or skewers in water for 10-15 minutes.
- Preheat grill to medium-high heat, 400°F.
- Cut bacon strips in half so you have short pieces.
- Cut a slit in each date and add about ½ tsp of cheese followed by and almond. Place dates, cheese-side down, on a piece of bacon, wrap it up and secure with a toothpick.
- Repeat with remaining ingredients.
- Place on hot grill, cover, reduce heat to medium and cook for 8-10 minutes, or until bacon is crispy on the bottom.
- Use tongs to flip each date and cook the other side un7l crispy, about 8-10 minutes.
- Place on a serving tray and drizzle with balsamic glaze.
Note: this recipe can be prepared in the oven – preheat oven to 425°F, arrange dates on a parchment-lined baking sheet and bake for 20-25 minutes, flipping halfway through.
Cranberry Mules
Ingredients
- 2 oz vodka
- 1 oz orange liqueur (such as Cointreau)
- 4 oz cranberry juice
- Juice of ½ a lime
- Ginger beer, for topping
- Cranberries and rosemary sprigs, for garnish
Directions
- Fill mule mug or cocktail glass with ice.
- In a shaker, combine vodka, orange liqueur, cranberry juice and lime.
- Shake to combine and pour over ice.
- Top with ginger beer and garnish with cranberries and rosemary.
