Grilling avocados makes them even more delicious.
- 2 ripe avocados
- 1 Tbsp olive oil
- 1 cup chopped tomatoes
- 2 Tbsp basil, chopped
- ¼ tsp salt
- ¼ tsp pepper
- ¼ cup crumbled feta cheese
- ½ lemon
- Halve avocados and brush with olive oil. Place on hot grill, cut side down, and grill until grill marks appear and avocados are heated through.
- Meanwhile, toss tomatoes, basil, salt and pepper. Add feta.
- Fill each avocado with tomato/feta mixture and add a squeeze of lemon. Serve immediately. Makes 4 servings.
NOTE: Grilled avocados are also delicious filled with fresh or jarred salsa.
