Grilling angel food cake brings out the most wonderful toasty caramelized flavor. Paired with a luscious fruit salsa and miraculous mason jar whipped cream, it’s a refreshing camp dessert that’s deliciously easy. Kids love to shake the whipped cream!
Grilled Angel Food Cake with Fruit Salsa and Whipped Cream
Ingredients
– 1 mango, peeled and diced
– 1 cup diced strawberries
– 1 cup diced pineapple
– 2-3 kiwis, peeled and diced
– Juice of 1 lime
– 2-3 tbsp. honey
– 10 mint leaves, chopped
– 1 cup whipping cream
– 1 tsp vanilla
– 1-2 tbsp powdered sugar
– 1 angel food cake
Directions
1. Prepare fruit and place in a large bowl. Add lime juice, honey and chopped mint and combine. Cover and refrigerate. (Note: can be made in advance and taken to camp!)
2. Place whipping cream, vanilla and powdered sugar in a chilled mason jar. Cover and shake for about 3 minutes until contents are no longer sloshing around and soft whipped cream has formed. Chill.
3. Preheat grill to medium. Clean and oil grill grates.
4. Slice angel food cake into 12 slices.
5. Place on grill and cook for 1-2 minutes until grill marks appear and cake is golden brown. Use tongs to flip and cook other side of each piece. Angel food cake grills very quickly, so keep an eye on it!
6. To serve, place grilled cake in a bowl and top with salsa and whipped cream.
Serves 6.
