Looking for an easy camping breakfast without the hassle? These sandwiches are easy to make ahead of time for an easy camping breakfast or grab-and-go breakfast at home.
Freezer Breakfast Sandwiches
Ingredients
- 12 eggs
- ½ cup milk
- 1 tsp salt
- ½ tsp black pepper
- Hot sauce, to taste
- 1 (4-6 oz) can chopped green chilies
- 6 English muffins
- 3 Tbsp. melted butter
- 6 slices pepper jack cheese
- 6 slices American cheese
- Aluminum foil, for wrapping
Directions
- Preheat oven to 375°F. Line a baking sheet with parchment paper. Spray a 13×9 baking dish with cooking spray.
- Shape sausage into 6 patties and place on prepared baking sheet. Add to oven and bake for 20 minutes or until done.
- In a large bowl, whisk eggs, milk, salt, pepper, hot sauce and green chilies
- Pour into prepared pan and place in same oven as sausage and bake for 20-25 minutes
- Let sausage patties and eggs cool.
- Arrange English muffins on a paper-lined baking sheet and toast under the broiler until golden brown.
- Cut the eggs into six pieces. Layer each English muffin with a slice of pepper jack, a slice of egg, a sausage patty and a slice of American cheese then top with the other half of the muffin.
- Wrap each sandwich in parchment paper followed by aluminum foil and place in a freezer bag.
- To reheat at camp, place in hot coals or on the grill and cook until heated through, about 10-15 minutes.
- To reheat at home, undo aluminum foil and wrap each sandwich in a damp paper towel, then microwave for 2-3 minutes until done. Alternately, place foil-wrapped sandwiches in the air fryer at 375°F for 5-7 minutes, or in a toaster oven for 10-15 minutes at 400°F.
