This foil pack ramen is an easy way to create a flavor-packed dinner! Cut all the veggies ahead of time and let everyone customize their own packs.
Foil Pack Thai Red Curry Ramen
Ingredients
– 1 can coconut milk
– 4 tbsp red curry paste
– 1 tbsp brown sugar
– The juice of 1 lime
– 4 packages of ramen noodles (save the spice packet for another use!)
– 6 cups chopped veggies (red pepper, broccoli, carrots, onion, snap peas, mushrooms, etc.)
– 4 cups water, chicken, or veggie broth
– Salt and pepper, to taste
– Lime wedges, for serving
– Sriracha, for serving
Directions
1. Preheat grill or oven to 400°F. Alternately, let campfire burn down, leaving hot coals.
2. Place coconut milk, curry paste, brown sugar and lime juice in a lidded container and shake to combine.
3. Place each ramen brick in the center of two18-inch squares of heavy duty aluminum foil.
4. Divide shrimp and veggies equally between the four foil packs.
5. Gather up the sides of the aluminum foil forming a high-sided cone to hold the liquid ingredients.
6. Pour the coconut milk mixture evenly between the foil packs followed by 1 cup of water or broth for each pack.
7. Bring the foil together, leaving a small vent to allow steam to escape.
