These are the crispiest, cheesiest grilled cheese we’ve ever had! The secret is spreading mayo and parm on the outside of the sandwiches for an even better grilled cheese.
Crispy Grilled Cheese
Ingredients
- 1/3 cup mayonnaise
- 1/3 cup grated parmesan
- 1/2 tsp. garlic salt
- 4 thick slices sourdough
- 2/3 – 1 cup shredded cheddar
- 2/3 – 1 cup shredded mozzarella
- 1 Roma tomato, sliced
- Tomato soup, for serving
Directions
- Preheat grill to medium heat and place a cast iron skillet on the grill.
- Combine mayonnaise, parmesan and garlic salt in a small bowl, mixing well.
- Divide mayo mixture between all four bread slices, spreading evenly on one side of each.
- Place 2 slices of bread, mayo-side down on the hot skillet.
- Top each slice with cheddar, tomato slices and mozzarella and top with remaining bread slices, mayo side up.
- Cook over medium heat until bottom of sandwiches are golden and crispy.
- Flip and cook the other side until golden and crispy.
- Meanwhile, pour tomato soup into a heavy-bottomed pan and add to grill to heat.
- Pour soup in bowls, cut sandwiches in half and start dunking!
