Creole Shrimp Etoufee

3 tablespoons butter
1 pound cleaned shrimp
½ – 1 teaspoon Cajun seasoning
½ green pepper, chopped
1 small onion, chopped
1 -2 teaspoons minced garlic
1 cup water
2 teaspoons cornstarch
Hot Prepared Rice

Equipment: Heavy Skillet with Lid

1. Melt the butter in the skillet over medium-high heat. Add the shrimp and sprinkle with Cajun seasoning. After cooking for 5-8 minutes, add the green pepper, onion and garlic. Stir while cooking for another five minutes or until the onion begins to become slightly translucent.

2. Dissolve the cornstarch in the water and add to the skillet. Cover and continue to simmer on low heat for 10-15 minutes. Serve over rice.
