Carrot Cake Breakfast & Trail Cookies


1 cup unbleached flour or finely ground oats
3 cups oatmeal (old fashioned or quick cooking)
1 tsp. baking soda
¼ cup ground flaxseed
½ tsp. salt
1 tsp. cinnamon
2 eggs
3/4 cup honey or real maple syrup
1/2 cup melted butter or coconut oil
½ cup unsweetened applesauce
2 tsp. vanilla
1 cup grated carrots
1 cup grated apple (1 apple)
1 cup chopped walnuts
1 cup raisins
1 cup shredded coconut, optional

Whisk together flour, oats, soda, ground flax, salt and cinnamon. In a separate bowl, combine eggs, honey, melted butter, applesauce and vanilla. Combine dry ingredients with egg mixture. Stir in carrots, apple, walnuts, raisins and coconut, if using. Let mixture sit for 20 minutes. Preheat oven to 375 degrees. Drop by level ¼ cupful onto greased baking sheets. Bake until lightly browned on the bottom, about 12-15 minutes. Makes 2 ½ – 3 dozen.
