This classic cool weather dish is a great treat for fall camping!
Camping Walking Tacos
Ingredients:
- 2 tbsp. olive oil
- 1 pound ground beef or turkey
- 1 red pepper, chopped
- 1 green pepper, chopped
- 3 stalks celery, chopped
- 1 large yellow onion, chopped
- 3-4 cloves garlic, minced
- 1 large (28 oz) can diced tomatoes, undrained
- 1 quart turkey, chicken or beef stock
- 2 tbsp. chili powder
- 1 tbsp. cumin
- 1 tsp. oregano
- 1 tsp. salt
- ½ tsp. pepper
- 1 can each pinto, black and kidney beans, drained and rinsed
- Individual bags of corn chips
- Shredded cheese, chopped white onion and fresh or sweet-heat jalapeños for garnish
Directions:
At home:
1. Heat the oil in a large sauté pan and cook ground meat, onion and garlic until meat is browned, about 8-10 minutes.
2. Add meat mixture to crock pot with peppers, celery, tomatoes, stock and beans.
3. Cook on low for 6-8 hours or on high for 3-4 hours. Season with salt and pepper to taste.
4. Place in a portable container and refrigerate.
At camp:
1. Place chili in a cast iron pot set over a medium high grill and heat until bubbling, stirring occasionally.
2. Open a chip bag from the top and fold over the edges, then ladle a scoop or two of chili into the bag.
