Camping Recipes: Tailgate Party KOA-Style

Bring the football party to your campsite with this pre-game feast that’s sure to make you some fans.

Appetizer: Chips n’ Dips

Ingredients:

  •  3 16 oz. containers sour cream
  • 1 packet taco seasoning
  • 1 packet ranch dressing mix
  • 1 packet onion soup mix
  • 2-3 bags assorted chips and pretzels

 

Directions:

Stir one of each packet of seasoning into each sour cream container. Stir well and chill 1 hour before serving with chips and pretzels.

Main: Grilled Onion Brats 

Ingredients:

  •  12 precooked bratwurst sausages
  • 1/4 cup butter
  • 3 onions sliced
  • 2 cups pickled sliced banana peppers
  • 12 sandwich buns
  • Sauerkraut
  • Deli mustard

 

Equipment:

Griddle or large skillet

 

Directions:

Heat the griddle over medium-high heat. Slice each bratwurst lengthwise and add to the grill cooking 5-7 minutes. Add butter, onion and banana peppers cooking until the onion is soft. Serve on buns with sauerkraut and mustard as desired.

Side: Big Blue Salad

Ingredients:

  • 1 bag fresh salad greens
  • 8 oz. grape tomatoes
  • 4 oz. blue cheese crumbles
  • 4 oz. real bacon crumbles
  • ½ cup French fried onions
  • 1 bottle prepared refrigerated ranch dressing

 

Directions:

Toss salad greens in a large bowl. Add tomatoes and top with blue cheese crumbles, bacon crumbles and French fried onions. Serve with ranch dressing.

Dessert: Camping Cupcakes

Ingredients:

  • 1 frozen pound cake, thawed
  • 1 can milk chocolate frosting
  • Yellow sprinkles or jimmies
  • Cupcake baking cups

 

Directions:

1. Slice the pound cake into thick slices. Cut each wedge into triangular pieces.

2. Melt the frosting by leaving in the sun or placing the container in a pan of boiling water for a few minutes while stirring the frosting until melted.

3. Dip each triangle wedge of pound cake halfway into the melted chocolate. Sprinkle with yellow sprinkles or jimmies and place on a cupcake baking cup.
