Add a campfire twist to a classic holiday favorite with this easy recipe for baked sweet potatoes with roasted marshmallows.
- 4 sweet potatoes
- 4-8 Tbsp. butter
- Kosher salt
- 12 marshmallows
- Have hot coals or preheated grill at the ready. Wash sweet potatoes and pierce all over with a fork. Wrap in heavy-duty aluminum foil and place in hot coals or on grill. Cook for 25-30 minutes, until tender.
- Remove from heat and cool slightly. Unwrap and cut sweet potato down the middle. Add butter and mash with a fork. Sprinkle with cinnamon and sea salt to taste. Roast three marshmallows and top potato. Repeat with remaining potatoes.
