Craving lasagna after a long day on the trail? This hearty lasagna soup is easy peasy and offers all the delicious flavors of the classic Italian dish!
Camp Lasagna Soup
Ingredients
- 1 Tbsp. olive oil
- 1 pound Italian sausage
- 1 large yellow onion, chopped
- 3 cloves garlic, minced
- 1 (24oz) jar tomato & basil pasta sauce
- 3 Tbsp. tomato paste
- 7-8 cups chicken broth
- pinch of red pepper flakes
- 1 tsp. Italian seasoning
- 10 lasagna noodles
- 1-2 tsp. balsamic vinegar, to taste
- Salt & pepper, to taste
- 3 Tbsp. chopped fresh parsley
Cheese Mixture:
- 1 cup ricotta
- 3/4 cup shredded mozzarella
- ½ cup grated parmesan
- ¼ cup basil leaves, chopped
Directions
- Place a large cast iron Dutch oven on the grill and preheat to medium-high heat.
- Add olive oil, Italian sausage and onion and cook until sausage has browned, breaking sausage into smaller pieces as it cooks. Add garlic and cook for another 2 minutes. Drain any excess grease.
- Add pasta sauce, tomato paste, 7 cups of chicken broth, red pepper flakes and Italian seasoning, close grill and bring to a boil.
- Break lasagna noodles into spoon-size pieces and add to soup.
- Close grill and gently boil until noodles are done, about 12-14 minutes.
- While soup is cooking, combine cheeses and basil in a small bowl and set aside until ready to serve.
- To serve, and balsamic vinegar and salt and pepper to taste. Add another cup of broth if soup is too thick. Stir in chopped parsley.
- Spoon into bowls and top each bowl with 2-3 spoonfuls of cheese mixture. Serve immediately.
- Makes 6 servings.
