This recipe brings all your breakfast favorites stacked together in an easy camp sammie!
Camp Griddle Breakfast Sandwiches
Ingredients:
– 1 tbsp. butter, for greasing griddle
– 1 cup complete pancake mix (just add water)
– 2/3 cup water
– Maple syrup
– 2 eggs
– 2 fully cooked breakfast sausage patties
– 2 slices American cheese
– Cooking spray
Tools:
– Grill griddle
– 6 wide mouth canning jar rings
Directions:
1. Preheat grill to medium high with griddle in place.
2. Combine pancake mix with water and let sit for 2 minutes.
3. Spray the canning jar rings with cooking spray and place on griddle.
4. Fill four of the canning rings halfway with pancake batter and drizzle with a teaspoon of maple syrup. (Alternatively, you can add 1-2 tbsp syrup to the batter, if desired)
5. Crack an egg in each of the remaining two rings. Place sausage patties on griddle. Cover with a grill-safe lid.
6. When pancakes are golden brown on the bottom, flip and remove rings, then cook until golden brown on the other side.
7. Flip eggs, if desired, and remove rings. Otherwise serve sunny side up.
8. To assemble sandwiches, top a pancake with sausage, egg and a slice of American cheese then top with the other pancake. Repeat for the second sandwich.
Makes 2 sandwiches, with a little leftover batter for more pancakes!
