These flavorful tacos are an easy way to feed the whole crew! Prep the chorizo ahead for a fast morning breakfast at camp.
Breakfast Tacos for a Crowd
Ingredients
- 1 pound chorizo
- 2 tbsp butter or oil
- 12 eggs
- 1 (4oz) can green chilies
- Salt and pepper
- Fresh corn tortillas
- 2 cups shredded cheddar or pepper jack
- 1 cup salsa
- 1/3 cup cilantro leaves
- 2 avocados, sliced
Directions
1. Cook chorizo. Tip: to save time at camp, cook chorizo and home and store in the cooler.
2. Melt butter or heat oil in a cast iron skilled set on the grill over medium heat.
3. Whisk together eggs with green chiles, salt and pepper and add to pan.
4. Cook undisturbed until eggs begin bubbling at edges of pan. Gently stir and cook until eggs are almost cooked.
5. Add cooked chorizo and cook until eggs are done, and chorizo is warm.
6. While eggs are cooking, sprinkle corn tortillas with a tablespoon of water (to create steam), wrap in foil, place on grill and heat until warm.
7. To serve, spoon some of the egg/chorizo mixture into a tortilla and top with cheese, salsa, cilantro and avocado.
Makes 12-14 tacos.
