This gorgeous appetizer is fun way to make the most of seasonal berries! The mocktail is tasty as-is, or you can add a splash of rum or vodka.
Brie Ingredients
- 1 baguette
- Olive oil
- 1 small wheel brie or camembert
- 2 cups blackberries
- 1 tbsp balsamic vinegar
- Honey, for drizzling
- Fresh mint, for garnish
Mocktail Ingredients
- 5 blackberries
- 5 mint leaves
- 1-2 tbsp honey, to taste
- ½ cup coconut water
- Club soda
- Additional blackberries and mint, for garnish
Directions
1. Place a small cast iron skillet on grill and preheat to medium high.
2. Slice bread into ½ inch slices and brush both sides with olive oil. Add to grill and toast until golden brown.
3. Meanwhile, add a drizzle of olive oil to skillet then add blackberries and 2 teaspoons balsamic. Cook until blackberries soften and a few burst.
4. Score the top of the brie and brush with remaining balsamic. Place in the center of the skillet, remove toasted bread and close grill.
5. Make mocktails: Place blackberries, mint leaves and honey in bottom of glass. Muddle well. Add coconut water and stir. Fill glass with ice and top with club soda. Garnish with additional blackberries and mint leaves.
6. To serve: Place skillet on a cutting board or platter and spoon some of the blackberries over the brie, then drizzle with honey. Arrange toasts around skillet and take a sip of your mocktail. Cheers!
