Bake the cornbread at home and this classic camping dinner comes together in a snap!
Beanie Weenies and Green Chile Cornbread
Cornbread Ingredients
- 3 eggs
- 1 cup sour cream or Greek yogurt
- ¼ cup butter, melted and cooled
- 1 (8.5 oz) box cornbread mix
- 1 tsp, baking powder
- ½ tsp salt
- 1 cup canned, fresh or frozen and thawed corn
- 1 (4 oz) can green chiles
- ½ cup shredded cheddar cheese
- 2 tbsp pickled jalapenos (optional)
Beanie Weenies Ingredients
- 6 slices bacon, chopped
- 8 hot dogs
- 2 (48 oz) cans baked beans
- ½ cup ketchup
- ¼ cup brown sugar
- 3 tbsp Worcestershire sauce
- 2 tsp mustard
- 1 tsp garlic powder
Directions
1. Bake the cornbread ahead of time. Preheat oven to 350°F and grease an 8-inch square pan.
2. In a large bowl, whisk eggs until combined, then whisk in sour cream and melted butter.
3. Stir in cornbread mix, baking powder and salt and combine. Stir in corn, green chilies and cheese.
4. Spread in prepared pan and bake for 40-45 minutes until center springs back.
5. At camp, set a cast iron skillet on grill and heat grill to medium high.
6. Add bacon to pan and cook until crispy. Remove cooked bacon and pour out all but 2 tbsp of the bacon grease.
7. Cut hot dogs into 1/2 inch pieces and add to hot pan. Cook until browned.
8. Stir in remaining ingredients, close grill and heat until bubbling, about 5-10 minutes.
9. Cut cornbread into squares and place a square in each bowl, then top with beanie weenies and crispy bacon.
