A favorite KOA camping recipe, bag kabobs pack an entire meal in one easy to cook, and even easier to clean up, package. A perfect meal to make ahead, bag kabobs mean you’ll spend more time having fun and less time figuring out what’s for dinner. Watch our video to see just how easy a delicious campfire dinner can be.
Boil potatoes for approximately 4-5 minutes depending on size. They should be firm and crisp, not mushy, to finish cooking on the grill. Let potatoes cool completely. Chop zucchini, onion and peppers in large pieces. Place chopped vegetables, whole jalapenos, potatoes and whole mushrooms on large piece of foil. Sprinkle with olive oil, soy sauce, garlic, lemon, lemon pepper, salt and dill. Toss gently to distribute seasonings. Wrap foil, sealing edges well.
To prepare meat, cut chicken or beef into large, stew-sized pieces. Place meat on a separate piece of foil and sprinkle with olive oil, soy sauce, garlic, grilled chicken seasoning, salt and pepper. Stir gently to distribute seasonings. Wrap foil, sealing edges well. When using more than one kind of meat, put in separate bags.
Place the foil packs into large ziptop bags to store in the cooler while traveling. To cook, remove foil bags from plastic and grill for 10 minutes, turning after 5-6 minutes. Since campfires and grill temperature vary, cooking time may be longer, check after 10 minutes. Allow to cool slightly before opening bags and enjoying.
