Baking Pie on the Fourth of July

What’s more patriotic than eating pie on the Fourth of July? 

We've got the perfect summertime treat to celebrate America's Birthday! Prepared and taste tested for your holiday festivities - we're dishing out tiny pies using a muffin pan. Oh yeah, that's right, individual adorable little pies -  making it super easy for serving. No need to cut slices as these tiny pies are ready to be served at your BBQ or camping trip. Dollop with whipped cream and ice cream. 


For this receipe, we went with a mixed berry filling stuffed with in season blueberries and strawberries.

Ingredients:

2 cups bluberries

2 cups strawberries, chopped 

1 tsp vanilla

1 tsp lemon zest 

1/8 tsp cinnamon 

1/4 cup corn starch

2/3 cup sugar, more or less depending on sweetness of fruit

1 tbsp butter, cut into tiny squares  

1 package pie crust (2 count) 

1 egg yolk + 1 tbsp of milk for egg wash 

Directions: 

Grease 12 count muffin pan with cooking spray.

Toss blueberries, strawberries, vanilla, lemon zest, cinnamon, corn starch, sugar, and butter in a bowl. This sweet aroma should delight your senses. In a small bowl, whisk egg and milk. Set each mixture aside and prepare pans for the base layer of crust. 

Cut 4” circles out of pie crust using a glass, mug, or cookie cutter. One pie shell should yield a dozen 4” circles in the muffin tin. Place the mini pie shell in each cupcake compartment pressing dough gently against the pan. Fill 1/4 cup of fresh fruit in each compartment.

Using the second pie shell it’s time to cut out your toppers. Now is your chance to get creative. Experiment slicing strips of crust for a classic lattice pie. Use a star cookie cutter for a festive touch. Mince the dough into pieces or sprinkle with a buttery crumb topping. Crimp the edges with a fork if the top and bottom crust touch. 

Crack that egg and whisk with milk to brush the top of each tiny pie. This will ensure the crust is evenly baked to perfection. 

Bake 350 degrees for 25-45 minutes or until golden and flakey. The fresh fruit filling should be bubbling and filling your kitchen with sweet heavenly smells. 

Allow to cool for at least 10 minutes. Using a flexible silicone spatula scoop out each pie and serve warm a la mode! These bad boys are also delicious for days to come. Enjoy!
