Zucchini Crab Cakes (no crab meat at all!)


  • 2 1/2  c  zucchini, grated
  • 1  c  seasoned bread crumbs
  • 2  Tbsp  onion, finely minced
  • 1  egg, beaten
  • 1  Tbsp  butter, melted
  • 1  tsp  Old Bay seasoning
  • 3 or 4  tsp  flour
  • oil for frying


Wash the zucchini and shred it with the skin left on. In a bowl combine zucchini, egg, and butter. Add bread crumbs, onion and seasoning. Mix well. Shape into patties. Heat the oil in frying pan. Roll patties in the flour and fry until golden brown on both sides. Drain on paper towel.
