Tortilla Soup

Ingredients

Makes 68

  • 1  c  chopped onion
  • 2  fresh jalapeno peppers (chopped)
  • 4  cloves garlic, minced
  • 1/4  c  vegetable oil
  • 2  14 oz. cans stewed tomatoes
  • 2  10 oz. cans tomatoes and green chilies
  • 2  tsp  ground cumin
  • 2  10 oz. cans beef bouillon
  • 2  10 oz. cans chicken broth
  • 1/2-1  Tbsp  ground red chilies
  • 2  Tbsp  fresh cilantro
  • 2  10 oz. cans tomato soup
  • 3  c  water
  • 12  flour tortillas, cut in 1/2" strips
  • 1  8 oz. shredded cheddar cheese

Preparation

Sauté first 3 ingredients in oil in large dutch oven until tender. Add next 9 ingredients. Bring to boil; cover; reduce heat and simmer for 1 hour. To serve, add chips/tortillas and garnish with cheese.
