Tequila Chicken


Makes 6

  • 2  tsp  shredded lime peel
  • 1/4  c  lime juice
  • 1/4  c  tequila
  • 1/4  tsp  pepper
  • 1  Tbsp  olive oil
  • 2  cloves of garlic, minced
  • 1/4  tsp  salt
  • 1  Tbsp  orange liqueur
  • 6  skinless, boneless chicken breasts


In a glass bowl, combine lime peel, lime juice, oil, liqueur, garlic, salt and pepper. Add chicken, turning to coat. Cover and chill 1 hour. Drain chicken; reserve marinade. Grill on uncovered grill over medium heat for 5 minutes. Turn chicken and brush with marinade; grill 7-10 minutes or until chicken is tender. Add a salad and toasted garlic bread.
