Taco Soup

Taco Soup

This soup works well in a slow cooker or on the stove, you can make it at camp or freeze ahead. Try it in a breadbowl; clean up is just washing spoons!

Ingredients

Makes 68

  • 3  cans Great Northern Beans (rinsed and drained)
  • 2  cans whole kernel corn
  • 2-3  cans diced tomatoes
  • 1  medium sweet onion (diced)
  • 1.5 - 2  c  water
  • 1  pkg. (1/3 cup) dry taco seasoning mix
  • 1  pkg. ranch party dip (dry mix)
  • any vegetables desired

Preparation

Mix all ingredients. Bring to a boil. Then turn down to simmer for a couple hours - OR - put in a crockpot. Start on high until hot, then turn to low, or leave on low all day.
