Sunshine on the Grill
- 1 fresh yellow squash per camper
- garlic butter sauce
- 1/2 large onion for every 4 campers
- salt and pepper
- Parmesan/Romano cheese (in shakable container)
I save the garlic sauce containers that come from pizza orders, (one container for 3 squash), these pack well for camping! You can make your own by mixing butter & minced garlic or juice. Slice each squash in half lengthwise and place 2 halves into a foil sheet, cut slits in the "meat" of the squash with a pocket knife. Sprinkle salt & pepper on each half (to taste) and then spread garlic butter sauce evenly over the top. Divide the onion (sliced in thin rings) over each "foil packet", sprinkle on cheese, then close foil packet tightly and REWRAP in opposite direction with another foil sheet. Cook on campfire or grill for approximately 25 minutes, turning every 5-8 minutes. DELICIOUS!!
