Stir-Fried Chicken and Noodles
- 2 boneless skinless chicken breasts
- 16 oz package frozen stir-fry vegetables
- 1 Ramen noodles
Cut chicken breasts into small slices, stir-fry in a small amount of olive oil until chicken browns. Add the package of vegetables and stir-fry for about 3 or 4 minutes. Mix the package of sauce mix included with the Ramen noodles with 1 cup of water. Add to chicken vegetable mixture. Bring to a boil, then break up the noodles and add them, stir well and cook 2 or 3 minutes or until noodles soften. Sprinkle with an Italian cheese if desired.
