Quick Corn Chowder
My quick and versitle favorite camper recipe. I always carry a can of corn for this heart warming chowder for lunch or supper.
Ingredients
- 1 can corn (I use no salt version)
- 2 - 3 potatoes (whatever variety and we don't peel)
- 1 onion (good sized)
- 1 - 2 Tbsp butter or olive oil
- dried parsley (a few shakes)
- pepper (salt optional)
- 4 c water
- 1/2 - 1 c powdered milk
Preparation
In your 2 quart saucepan, sauté onion in butter over medium heat 'till translucent. Cut potato into small chunks and add to pan . (Wedges are nicer than cubes) Add water and bring to a boil. Lower heat and add can of corn including any liquid. Add powdered milk, parsley and pepper (salt if you must). Simmer a few minutes to blend the flavors. Try not to boil after you add the milk
.Options: You can cook the onion in a slice or so of cut up bacon. If anyone catches a couple of blue gills you can add the bits of fish at the same time as the corn and you'll have a tasty fish chowder.
