Oatmeal-Nut Pancakes

Ingredients

  • 1 1/2  c  uncooked rolled oats
  • 1  c  flour
  • 2  Tbsp  brown sugar
  • 1/4  tsp  salt
  • 3  tsp  baking powder
  • 1/2  c  chopped nuts (black walnuts are best but English walnuts, pecans or almonds are also good)
  • 1 1/2  c  milk
  • 2  eggs
  • 2  Tbsp  melted butter or margarine

Preparation

Combine uncooked rolled oats, flour, brown sugar, salt, baking powder and nuts. Set aside. Whisk together milk, eggs, melted butter or margarine. Pour over dry ingredients and mix until just combined. Lightly oil or grease griddle and heat to about 350 degrees. Spoon about 1/4 c. of batter onto heated griddle and cook until bubbly and edges look dry. Turn pancake over and cook until lightly browned. Serve with maple syrup or Orange Sauce (recipe follows).

Orange Sauce

Combine 3/4 c. brown sugar, 4 Tablespoons butter or margarine, 1/2 c. orange juice, 1 Tablespoon grated orange peel in small saucepan. Simmer 5 minutes, stirring constantly. Cool slightly.
