My Dad's Spuds


  • 6 - 7  medium Russet potatoes
  • 1/2  yellow onion, sliced
  • 1  c  grated cheddar cheese
  • salt and pepper
  • 1  can beer (any brand)


Peel spuds, wash, and slice for frying. In large cast iron camping skillet start frying potatoes and onions in oil. Add spices. Keep adding beer until potatoes are moist and tender. Grate cheese all over top. After cheese has almost melted...Enjoy!
